Noodles

Making pasta with your hands, and not a pasta machine! Amazing!

Last night we went out for Chinese Noodles. It is one of the most fascinating thing I have seen in China, and I have been lucky to see it every year.
He starts with one piece of dough and keeps stretching and pulling it and splitting it into thinner strands until he ends up with spaghetti sized noodles. How he gets it so thin with only his fingers is so cool! Served with a broth and bits of meat and onion, it is so yummy!

The shop was run by a man and his wife, and their niece who was 16 years old. They worked very hard.
